More and more people are electing to switch to a vegetarian or even vegan diet for a number of reasons, including health concerns. Recent large scale longevity studies have found that people who practice a diet rich in complex carbohydrates and low in meat and animal products tend to live longer. There is a lower incidence of heart disease where such a diet is followed, and a lower rate of colorectal cancer. Other reasons for switching to a vegetarian diet include more efficient use of land than by grazing animals, moral issues about the care and slaughtering of food animals, and the increasing rate of toxic chemicals and disease bearing organisms in the meat provided for food.
There are however, some vegetarian health concerns which should be addressed before making the decision to switch to a vegetarian diet. Being a vegetarian is not just eliminating meat and animal products from the diet. It is rather, a dedication to eating healthfully. Particularly for children and teenagers, care should be taken to ensure that all the needed nutrients are included in the diet. Some of these nutrients are those typically thought of as being only available in meat and animal products, so choosing a vegetarian lifestyle means finding available substitutes for these substances which do not come from an animal source.
The first of these nutrients is protein. Your body requires protein to survive and grow. Since the body does not store protein, it must be eaten regularly in adequate amounts. If you do not look to animal protein to provide the muscle building blocks, you can find protein in nuts, nut butters, soy products such as tofu, beans, and lentils.
Meat, particularly organ meats such as liver have always been considered a good source of iron. Iron is needed to produce red blood cells. Vegetar.ians can make iron rich choices from dark green leafy vegetables such as spinach, beet greens and dried beans. If you increase your level of vitamin C intake, you will assist your body to assimilate iron from these sources.
Calcium is another necessary nutrient. It is used in the formation of bones and teeth as well as in joint and ligament strength. Calcium is found in milk products, but vegans can also get it from eating leafy vegetables such as collard and kale. Calcium is also found in tofu, broccoli and beans.
Lack of B12 may cause anemia, but some studies show that only minute amounts of B12 are required and this need can be met by using fortified cereals or vitamin supplements
Vitamin D is used along with calcium for bone and teeth building. Exposure to the sun helps the body to produce vitamin D.
